Wine
Foxeys Hangout Shiraz is sourced from estate and contracted vineyards on the Mornington Peninsula. The sites are managed using little or no chemical input.
Conditions in the vineyards lend themselves to producing Shiraz with purity and length. These include high fruit exposure to sunlight, low yields and fairly lean soils.
The fruit is fermented as whole berries, typically with a small inclusion of Viognier. Native yeasts are used for fermentation. The wine matures in French oak, a small portion new to add subtle complexity.
Crimson purple, Foxeys Hangout Shiraz has earthy dark fruit flavours and a long finish of substantial yet fine grained tannins. Cellaring potential is 10 years.
